FAM FAVORITE 1 HOUR PIZZA DOUGH

Pizza night just became a weekly staple on Fridays at our house PLUS a whole lot easier with this 1-hour pizza dough recipe. This recipe is a favorite in our house, duplicated in other houses and a WIN with my toddler, Atlas. It’s quick, simple, and fun to make together, too!

 

Ingredients:

  • 3-⅓ cups bread flour or all-purpose flour (dipped and leveled)

  • 1 packet instant (rapid-rise) dry yeast (2-½ teaspoons)

  • 1 teaspoon sugar

  • 2 teaspoons fine sea salt

  • 1-¼ cups warm water

  • Extra-virgin olive oil

 

Instructions:

  1. Mix the Dry Ingredients: In a large bowl, combine the flour, yeast, salt, and sugar. Stir until everything is mixed together.

  2. Add Water: Pour in the warm water and stir until a shaggy dough forms, with just a little bit of dry flour left at the bottom of the bowl.

  3. Knead the Dough: Remove any rings from your fingers. Knead the dough in the bowl with both hands until no more dry flour remains and the dough comes together into a ball. This should only take a few minutes.

  4. Let It Rise: Drizzle some olive oil inside a large bowl (or clean the one you used). Place the dough ball in the greased bowl, cover tightly with a lid or plastic wrap, and let it rise in a warm place for at least 45 minutes to 2 hours.

  5. Check the Dough: After 45 minutes, your dough should have grown by at least 50 percent and have little bubbles on the bottom. If you want a slightly airier dough, let it rise for another hour.

  6. Divide and Rest: Dust a clean work surface with flour. Divide the dough into two equal pieces and form each piece into a ball. Place the dough balls on the floured surface and cover with an inverted bowl or plastic wrap. Let rest for 10 to 15 minutes.

  7. Stretch/Roll the Dough: Take one dough ball and place it on a lightly floured surface. Flatten it a little with your hand or a rolling pin, then pick up the dough and gently stretch or roll it out until you have a 12-inch round. Repeat with the second dough ball.

  8. Top and Bake: Top your stretched dough with your favorite toppings and bake according to your preferred pizza recipe. If you're only using one dough ball, you can freeze the second one or refrigerate it for up to 2 days.

 

My favorite way to cook is using my cast iron, On high heat brown one side of the crust. When a slight smoke rises from the pan, flip the dough. Quickly sauce + top and place in the oven on Broil. Watch it bubble and brown. Slice and Serve!

 

This 1-hour pizza dough is a game-changer for us. It's straightforward, quick, and yields a delicious crust that holds up to any toppings you throw on it. Whether you’re a seasoned home cook or just starting, this recipe is sure to become a family favorite, just like it has for Atlas and me. Happy pizza making!

THE BEST HOME FLIPS IN PHOENIX

When you think of the land of opportunity, is Phoenix, Arizona the first place that comes to mind? This desert city is entering yet another growth cycle, with one of the best job economies in the country, with the average salary 20 percent higher than the national average. At the same time, median home prices are below the national average—at least for now. 

Phoenix is poised for another real estate boom, which points to rising home values. Real estate company Tomo analyzed the top home flips in the United States and found that Phoenix is a standout in multiple categories. With major tech companies and new residents eager to call Phoenix home, this is an attractive time to update and list your property.

Keep on the sunny side

The Phoenix metro area draws people from across the nation. Fortune 500 companies and small businesses alike put down roots in this growing city. Top employers in Phoenix include Banner Health, American Express, Amazon, and Walmart—all of which are in growth cycles of their own. With a projected job increase of 48.2 percent over the next ten years, job seekers will continue to flow to Phoenix.

Many newcomers are arriving from larger cities like San Francisco, New York, Seattle, Los Angeles, and Austin. These ultra competitive real estate markets make home ownership impossible for most working people. In Phoenix, however, buying property is a real option. The top five flips identified by Tomo shared all the elements of perfect starter homes:

  • Renovated interior

  • Low maintenance landscaping

  • Access to freeways and public schools

  • New weather proofing and appliances

  • Great value and a fair price

Tomo found that the most successful home flips in Phoenix, AZ made the most of the properties’ attractive qualities. All these homes were complete home renovations. The top flip increased its sale price by 233 percent. In total, all five flips generated an increase to sales price of $1.2 million, and were flipped in as little as five months.

Put your best foot forward

Managing a successful home flip can feel overwhelming. However, identifying your property’s potential may be key to closing at more than double your purchase price. Open floor plans, new HVAC and interior climate control options, new windows, and other features attract buyers who want the most value for their money. Curb appeal is second to common sense in this market, especially when it comes to the weather.

Phoenix is a desert lover’s dream, with gorgeous sunsets, great restaurants, and constant sunshine. However, the climate can be intense for people who aren’t familiar with the Southwest. Summer temperatures make indoor comfort non-negotiable. Smart flips take this into account. You don’t have to install a solar panel in the front yard—but it might pay off!

The most valuable flips included brand-new renovations and installations that can handle 100-degree summers, but still keep cozy during the mild winters. Here are the top 5 listings that made our Best Flip list:

#5 1757 East Chambers Street

When style and solid design intersect, it’s a beautiful thing. This flip captures the best of both with brand-new hardware, a new air conditioning system, a new water heater, new windows, and more. A new roof and new exterior stucco add energy-saving elements as well. Inside, classy grey cabinetry, a gourmet kitchen with a backsplash and stainless steel appliances, and custom tiling throughout the home make this comfortable 3-bedroom property feel luxurious and roomy. With only a five-month renovation, this flip increased its value from $155K to $377K—a change of 143 percent.

#4 1823 East Harvard Street

Love the architecture of bygone decades? This 1930s home is pure Old Hollywood glamour, with black and white accents that showcase its vintage features. Originally purchased in 2023, the property underwent an extensive and total renovation, selling eight months later for $616K. The home’s fully upgraded interior plays to the black-and-white theme, with white quartz countertops and white subway tiling in the showers. A new roof and stucco, new windows, new air conditioning system, and covered parking took this classic beauty into the modern age.

#3 514 East Charleston Avenue

This fully renovated manufactured home offers plenty of room to grow, both inside and out. Located in a quiet, well located North Phoenix neighborhood, this flip features a spacious split master floor plan and two-car garage. A new HVAC unit, dual pane windows, and a large fenced yard offer privacy and protection—not to mention abundant space for trailers, boats, and slab parking. New stainless steel appliances and a new roof are the cherry on top. This home sold in 2022 for $142K. Post-flip, its price tag was 146 percent higher, closing at $350K.

#2 208 West Wier Avenue

The price tag on this charming flip only sweetens the deal. This 3 bedroom, 3 bathroom home is perfect as a first home or investment property. Purchased for $110K in 2023, this home sold only five months later for $300K. The house has been painted in classic Southwest colors in and out. It sits inside a spacious fenced yard. The interior is fully renovated, with new tile flooring, two new full baths, and an all-new kitchen with new cabinets and backsplash. New air conditioning, new ceiling fans, and new windows with sunscreens help summer-proof this adorable home.

#1 2506 East Allan Street

While it may look humble from the sidewalk, this fully renovated home is incredibly classy inside. Its open living room is filled with natural light. The key word for this home is new, with brand-new floors, fresh paint, recessed lighting, ceiling fans, kitchen, bathrooms, and more. Best of all, the backyard showcases stunning mountain views of South Mountain. This home sold in 2023 for $90K, but after its flip, more than doubled its purchase price. Only six months later, it sold at $300K-233 percent above its initial purchase price.

KNOW SUMMIT 2024 SUCCESS

Have you ever wondered what it's like to be in a room filled with AMBITIOUS female entrepreneurs, leaders, and C Suite executives? This is KNOW! And Moving to Master Summit 2024 was the place. The Palomar Hotel in Phoenix, Arizona, was buzzing with energy as women from all over gathered for three days of inspiration, empowerment, and connection.

 

From fire side chats with Rachel Roff and Jill Osur to a keynote speech from Jen Welter, first female NFL coach this event bas back to back! In between were panel discussion and hands-on workshops, there was no shortage of valuable insights and knowledge to soak up at the KNOW Summit. I was excited to put some faces to names, meet some phenomenal women and, of course, see the the Summit week of style!

 
 

I am honored to work with the visionary, Sarah Benken Foushee who dreams up the whole vision. Then, amazing power players come together to execute it. Huge shout out to Dreams to Reality from Tampa, FL for their amazing builds. I love having our resident DJ, Sarah Selfish to play summit from the walk out music during programming to the Tropical Disco Dance Vibes + its after party! +++ My task force of volunteers and HQ, we could NOT run with out you!

 

My favorite takeaway from Jen Welter was her stating if you share your dream with someone, listen to how they react! If they encourage and ask more, those are your people. Sitting here I cannot pin point one moment I loved most. I think it was the genuine conversations, connections and compliments from those cheering me on while I cheer them on.

POTTY TRAINING DIARIES

"Rome wasn't built in a day," so naturally potty training Atlas has been 5 months in the making. Luckily, I diaried it all in action, photos and screen shots included.

 

9/6/23 Day 1: Amazon, for the win and Elmo was the choice over the Target budget bundle of undies that went back after he immediately said “No no no.”

This morning we started off with a couple hours, education and asking every five minutes to go potty. After sitting on the potty for a little bit, we were able to get enough to celebrate, and a sticker to go on the chart.

I also put a post up on Instagram asking for advice tips tricks. Prayers, books., etc . Will share responses:

 

Day 2: Okay! Magical Checklist:

  • Stickers for reward

  • Books and mags for reading materials

  • Grunt, relax, breath, feel it here ( point to bowels )

  • Routine: put back on undies, hand wash, get sticker on the chart, run and tell dada!

  • Lots of praise! 

Only pee and lots of it so far! “Try again” one more time”. No poop yet …

Day 5 : The past few days have been a blur. I think he is nap rebellion because of potty training, but I am no child psychologist. This morning before we sat down for breakfast he stood up and pointed to his belly, and I asked if he wanted to go potty and he said, “Yes,” so we started off really good and really early. Still no poop yet just practicing reading relaxing.

I thought maybe he was getting poop shy so started to do laundry while he was sitting there and then he got distracted.

Day 9: starting right out of bed in the potty  is a huge win! Let’s Keep it Up!

1/26/24 Day 109 or Day 10? Operation Weekend No Pants!

After off and on tries since September we are commuted to a no pants weekend and really getting this done!

 

Friday and Saturday we had events and dance class so although we used big boy undies he never “went” when we were out. 

Monday allergies hit hard so with an extra runny nose we are staying in and really going pantsless. 

I left Monday morning for work so were singing all day Daniel Tigers’ “When you have to go potty stop and go right away,” song, I came home immediately to “look mom!” Straight to his potty in the bathroom to show me he can go and wash and dry and he was so excited. 

 

 2/5/24 The Final Days: School started and we knew that this was the final piece in the puzzle of potty training… seeing other kids like him use it! 

So we loaded up on PullUps and sent him off to school with a few changes of clothes. 

Teacher was impressed and said he was using it with the other kids. 

 
 
 

At home the Pullups turned into another diaper so we are back to no pants and home! 

 
 

2/25/24: Today I am getting rid of the changing table in his room. We no longer use it. We potty in the potty or change in the bathroom and need to associate all those things n that room. Time for a mini big boy room update.

3/2/24: Big boy undies all day.

Pottied at the Home Depot Public Bathroom! 

Went Poo Poo in the potty at home later in the afternoon.

Pottied for the baby sitter while mom any dad were rearing a podcast.


I think I am ready to post our diaries and frame the last diaper ever! 


I know we will have plenty of accidents but the days of diaper genies and the grossest changing tables in public restrooms are in the rear view!

SPRING TRAINING WITH A TODDLER

Spring Training is not just for die-hard baseball fans; it's also a fantastic opportunity for families to enjoy a day out together. Atlas attended his FIRST Spring Training Game along with my bestfriend who flew into town! Saturday, March 9 Chicago Cubs v Colorado Rockies, 1:05 game. We captured the memories, photos and tips and tricks for ya! If you're planning to attend a Saturday Cubs Spring Training game at Sloan Park with your toddler, we've got you covered to make the experience enjoyable for everyone, not just the three year olds!

 

1. Arrive Early and Claim Your Spot

With lawn seats at Sloan Park, arriving early is key to snagging a good spot for you and your fam. Toddlers love to move around, so pick a spot where they have some space to play and explore while still being able to see the game. Arriving early also gives you time to check out the ballpark amenities before the crowds arrive.

 

2. Pack Plenty of Snacks and Water

Toddlers are notorious for their bottomless appetites and constant need for hydration, especially in the Arizona sun. Be sure to pack a variety of snacks and plenty of water to keep them fueled and hydrated throughout the game. Portable, mess-free snacks like sliced fruit, crackers, and cheese sticks are ideal for little hands. We, of course, splurged on the commemorative Cubs helmet ice cream and a hotdog for the vibes!

 

3. Let Them Burn Off Some Energy

Take your toddler to the little baseball field behind the outfield for some during the game playtime. They'll love running around and pretending to be their favorite Cubs players. It's a great way to burn off some energy in between innings or getting through all 9!

 

4. Get Your Toddler's First Timer's Certificate

Make your toddler's first Cubs Spring Training game extra special by stopping by the Fan Services Booth near the First Base Gate to pick up a personalized First Timer's Certificate. It's a fun keepsake to commemorate their first baseball experience and makes for a great photo op! No age limit, so even if your first game is at 35 you can still get one!

 

5. Embrace the Cubs Spirit

One of the most exciting things about attending a Cubs game at Sloan Park is the electric atmosphere. Sloan is a mini Wrigley! From the moment you arrive, you'll be surrounded by fellow Cubs fans who share your love for the game. Atlas was in Awe immediately recognizing there are tons of Cubs (+Bears fans out there too). Plus the Cubs WON! When the famous “Go Cubs, Go” song blasted through the speakers it became Atlas’ new jam, on repeat to this day!

 

There you have it: a fun and friendly guide to enjoying Spring Training games with your toddler. These tips dont just apply to Cubs fans but all sports fans big and little. Cheers to a great season and Go Cubs!

PRESCHOOL ADVENTURES WITH ATLAS

Our little adventurer, Atlas, took a giant leap into the world of learning, laughter, and new friendships by staring school this past week. A whole new chapter began and I'll admit it—I'm the one shedding a tear while he's too excited to notice.

 

From practicing using the potty to engaging in health and wellness activities, Atlas's day was filled with new experiences and discoveries. The daily reports share his adventures, from letter recognition to big movements imitating animals. It warms my heart to see him thriving in this new environment. I love the naptime reports, “Atlas seemed restless during naptime, opting to play with puppets instead.” Hey, who needs naps when there are puppets to play with, right?

 

Atlas didn't touch their gourmet offerings (typical!), but he happily demolished the snacks I packed. The teriyaki chicken? Yeah, that didn't even make it onto Atlas' radar. Snack game strong!

 

My fave is the crash course in preschool politeness. "Please pass the crayons, and thank you for the cookies.” Atlas is excited about his grand entrance into the world of preschool. Get this—he asked to go back the very next morning! That's our Atlas, always ready for the next adventure. By the end of the week, Atlas wasn't just attending preschool; he was building a tribe of tiny companions.

THIRD ROCK FROM THE SUN- ATLAS TURNS THREE

Our little explorer, Atlas, just celebrated the big 3, and his '3rd Rock from the Sun' birthday party was an intergalactic adventure to remember! Let's dive into the festivities that made this day out of this world.

 

Giant pizza, rock painting, and a dance party kept the older astronauts and the younger ones accepting the mission. Pizza was from the famous Geno’s Pizza (same giant from our rehearsal dinner). The best! My signature sugar cookie recipe with an an Atlas spin were a hit as well!

The moons rock painting station stayed busy all day. From fun activity sheets to DIY moon rocks these kids were mini Michelangelos. Who doesnt want a fun little moon rock to remember the adventure?

Close by you could bounce, search for treasure and samples in the sand, complete the ball pit rocket ship tunnel and ride off exploring the surface on one of three rovers (aka tricycles). There was alway a dance party with hits for everyone taking you back in a musical dimension.

My favorite moment, although it was hard to pick, was when we gathered around to sing 'Happy Birthday.' Atlas, our little star, looked at everyone and said, "Thank you, everybody." Cue the collective 'awws'!

 

It wasn't just a birthday—it was a cosmic celebration of love, joy, and the incredible journey of our little explorer, Atlas. Here's to many more orbits around the sun and countless adventures on with our own '3rd Rock from the Sun'!

DEAR SANTA FROM ATLAS

Happy Holidays Finding Arizona fam! Guess what? Atlas, the adorable almost three-year-old has a special message for the man in red himself—Santa! Let's dive into Atlas's letter and get a peek into his toddler Christmas dreams.

 

Dear Santa,

Merry Christmas. It's me, Atlas, I've been super good this year—ask my mom and dad; they'll vouch for me! I even wrote our Holiday Postcards this year.

I wanted to share a few of my most favorite things with you and say thanks.

First off, I love staying busy everyday. From parks, to classes to shopping I just love seeing friends!

Now, let's talk talents. I'm basically a little fish in swim class, splashing and making waves. Dance class? I’m pretty much the star on the Christmas tree over there. And in the kitchen, I'm a mini chef, can’t wait for you to try my cookies my mom and I made.

Okay, Christmas wishes. I'm all about Paw Patrol and Mickey Mouse—they're my absolute faves. Their adventures are epic, Santa! And when I’m watching, Nutrigrain bars are my snack, but only the strawberry ones, please.

Oh, Santa, can we talk about the Grinch? It's my favorite Christmas movie and book ever! His grumpy heart turning all warm and fuzzy—it's the best. I love max! Do you think he likes Nutrigrain bars too?

Santa, I'm turning three in January! So, this Christmas is like a super-duper early birthday party for me as I go visit my Papa and GG in San Diego. I'm even leaving out some milk and cookies for you there so forward all gifts to the beach. Maybe throw in a Nutrigrain bar for Rudolf.

Wishing you a Merry Christmas, Santa! And if you see the Grinch, tell him I said hi!

FEASTING, FOOTBALL & FIRSTS: OUR INAUGURAL THANKSGIVING HOSTING

Oh, the excitement of hosting our very first Thanksgiving bash. We welcomed friends and fam into our home filled with love and a touch of chaos. Grateful doesn't even begin to cover it. Thankful for the belly laughs, the warm embraces, and the simple joy of having everyone we love under one roof.

 

Cue the kitchen magic! Tried and tested, Sunny's Texas Two-Step Turkey Recipe became our kitchen sidekick, turning our humble turkey into the superstar of the feast. The air buzzed with the scent of success, and let me tell you, it was chef's kiss perfect! We made sure all the sides were covered: Sweet potato skewers, green bean casserole, mac and cheese, cranberry sauce, so much more but let’s not forget my signature cobbler!

 

Our table was a Pinterest-worthy dream- our long table became the epicenter of joy and laughter. Kiddos had a blast with activities galore. Plus, we took our living room to the patio with the three-game marathon on the screen for our football fanatics!

 

As we gathered round, it wasn't just about the grub; it was a about the memories. Celebrating in a place we once shared out vows, now passing gravy and coloring turkeys. Here's to many more more laughter-filled, food coma-inducing gatherings!

BEARS BOLTS SOFI EXPERIENCE

Recently, I took a day trip to LA for da Bears versus the Chargers, a televised Sunday Night Football game. The significance ran deeper than touchdowns and tackles; it was a reunion with football, family, and a jersey coming out of the archives. Check out the incredible throwback photos too!

 

I hopped on the plane for LAX midday, ready to catch up with friends and family at SoFi Stadium The last time I caught the Bears and Chargers live was way back in 2015 at Qualcomm Stadium. I rocked this half Bears, half Chargers jersey — the Velcro edition. Fast forward eight years, and this bad boy was dusted off for another game day- sewn tight.

 

The highlight? Picture this: Uber dropping you off outside the stadium and as your walking through the parking lot you hear cheers, banter, and that unmistakable team spirit in the air. That was the real touchdown moment reuniting with my fam!

 

It was near game time so we headed in. SoFi Stadium First-timer alert, and guess what? It's now my favorite! The place exudes a different kind of energy, and that screen… wow! Bestfriend and I, of course, had the VIP experience and one too many margs.

 
 

The Los Angeles Chargers defeated the Chicago Bears 30-13, but we were the real winners! Born a Bears fan, bred in Bolt country. They will always be my San Diego Super Chargers. So here's to the gridiron, the cheers, and the promise of many more Bears Bolts showdowns.
